Stuffed Grape Leaves - Zeytinyagli Yaprak Dolmasi
  • 2 cups rice
  • 4 medium onions
  • Juice of 2 lemons
  • 2 Tablespoons sugar
  • 1 cup parsley
  • 1 cup Dill
  • 1 cup Mint
  • 6 Tablespoons pinenuts
  • 6 Tablespoons currants
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon black pepper
  • 1 1/4 teaspoon salt
  • 2/3 cup olive oil
  • 2 cup for the rice filling
  • 1.5 cups during final cooking
  • Grape Leaves, separated
  • 2 Medium potatoes

Heat the olive oil in a medium pot

Add the pine nuts, stir until light brown.

Add the onions, sautee until they are translucent, do not brown.

Add the rice, continue stirring for 15 minutes.

Remove the rice mixture from heat. Add all the remaining ingredients. Add 1 cup water, set aside. Wait until the mixture is cool to touch.

Peel the potatoes and cut 1.4 inch thick slices. Arrange the potato slices at the bottom of your pot as shown below. You can also sprinkle the stems of the grape leaves on the potatoes.

Loosely stuff the grape leaves with the rice mixture as shown in the picture sequence below.

Arrange the stuffed grape leaves in the pot as whown below.

Add 2 cups of cold water, cook at low heat for 45 minutes.
