Cucumbers in Yogurt

  • 1 cup yogurt
  • 1/3 cup water
  • 1 small cucumber
  • 1 clove of garlic
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • dill weed & olive oil (for garnish)

In Turkey, this meze is called "cacik". Typically, cacik is served not as an appetizer but as a side dish. Cacik can be served next to kebabs, other meat dishes or even just plain rice. Cacik can be served in a small bowl and can be eaten with a spoon just like a soup. It is a simple recipe, which does not take more than a few minutes.

Peel its skin and coarsely grate the cucumber. Some prefer using thinly sliced cucumber wedges instead. If you want to do the same, divide the cucumber into four wedges.

In a mixing bowl, mix the yogurt, water, olive oil and salt.

Add the garlic clove after passing it through your garlic press. Mix well.

Add the grated cucumber, mix well.

Garnish with olive oil and dill weed. Serve cold.
